Tuna Tomatoes

Tuna TomatoesThis recipe, inspired from Fast Food My Way by Jacques Pepin, is just that: fast food. But you’ll find no greasy burgers or artery clogging fries here. Instead fresh tomatoes, tuna, olives, and anchovies are on the menu. This recipe can be a real crowd pleaser: it’s a simple and quick fix, yet the finished product is delicious and aesthetically pleasing.

Ingredients

– 4 ripe medium tomatoes
– 1 can of tuna packed in oil, drained
– 1 TBSP scallions, minced
– 5 kalamata olives, pitted, chopped
– 10 anchovies fillet, diced
– salt
– fresh-ground black pepper

Directions

– Cut the top of the tomatoes and save the top
– Hollow the tomatoes and place the tomato flesh into a bowl
– Crush the tomatoes
– Mix in the tuna, scallions, olives, anchovies, salt, and pepper
– Fill the tomatoes with the mixture and serve with the top put back on

    Karen, homegrown tomatoes taste so much better! I just can’t seem to grow them big enough to be able to stuff them, at least not consistently.
